Sup Fam, we’ve got a good one here today: Chipotle Chicken Tacos with a spicy avocado salsa.
We did this one classic lazy style to keep it simple. Read on below for simple, tasty tacos.
Ingredients:
- 1 Rotisserie Chicken ($5 at Safeway)
- 1 Can of chipotle chilies
- 1 Onion
- 2 Avocados
- 1 Bunch of Cilantro
- 1 Serrano Pepper
- 1 pack of corn tortillas (recommendation: Guerrero)
- 1 jar of favorite salsa fresca (recommendation: Casa Sanchez)
- 1 lime
Blender, Sauté pan, Baking Tray
Prep: Avocado Salsa
Begin by cutting the avocados in half and tossing them into the blender. Next, cut the serrano pepper length wise, removing seeds as desired, and then add into the blender. Next, toss in the cilantro, shredding it with your hands. Add salt, pepper, and some extra-virgin-olive-oil.

Add a bit of water to give the mixture some moisture and then blend until smooth.

Taste test with a few chips, adding additional salt, pepper, and lime to taste. Set aside and get ready to prep the chicken.
Prep: Chipotle Chicken.
In classic lazy style, buying a rotisserie chicken saves you the need to actually cook the chicken from scratch, while still providing juicy chicken as a base ingredient. Begin by shredding the rotisserie chicken, adding the shreds into a separate bowl.
Next, slice up the onion into quarter medallions. Start by cutting the onion in half, and placing it down and slicing downwards to create nice slivers. Set aside in a bowl.
Now, put the pan onto medium heat and add some olive oil. Now, add in the onions and begin to sauté them. Add some salt and pepper at this stage. Once the onions have turned opaque, add in the shredded chicken. Continue to sauté, mixing in the chicken. To get that nice red color, open up the can of chipotle peppers and add these into the pan. Mix the peppers in and let this mixture cook down.

Assembly:
Now it’s time to put these tacos together. Get out your baking pan and cover it with foil. Drizzle some vegetable oil onto the foil and rub it across the pan using a paper towel (alternatively use #PAM).
Now lay down tortillas covering the pan. Begin to spoon the chipotle chicken mixture into the tacos. Now, using toothpicks or skewers, pin up the sides of the tortillas to create a nice taco shell shape.
Once you’ve assembled all your tacos, toss the tray into the oven at 400F. Bake for 10 -15 minutes or until the edges of the tortillas become crispy.
Now take the tacos out and let them rest.
